Fenugreek is used as an ingredient in spice blends and a flavoring agent in foods, beverages, and tobacco. Fenugreek extracts are also used in soaps and cosmetics. In North Africa, Asia, and southern Europe, fenugreek was traditionally used for diabetes and to increase milk supply in women who were breastfeeding. Fenugreek (Trigonella foenum-graecum) is a seed that has been used for centuries as both a culinary spice and for medicinal purposes in many traditional/folk medicine systems (Yadav and Banquer, 2014). The seed and its extracts have shown antioxidant and antiinflammatory properties. Fenugreek seeds consist of 45 to 60% carbohydrates, in which mucilaginous fibre (galactomannans), 20 to 30% proteins high in tryptophan and lysine, 5 to 10% fixed oils (lipids), pyridine alkaloids, mainly choline (0.5%), trigonelline (0.2–0.38%), gentianine, and carpaine, the flavonoids apigenin, orientin, luteolin.
