Ginger is a knotted, thick, beige underground stem, called a rhizome. The stem sticks up about 12 inches above ground with long, narrow, ribbed, green leaves, and white or yellowish-green flowers.The ginger plant has a thick, branched rhizome (underground stem) with a brown outer layer and yellow centre that has a spicy, citrusy aroma. Every year, it grows pseudostems (false stems made of tightly wrapped leaf bases) from the rhizome which bear narrow leaves.While somewhat hard to describe, the flavor of ginger is often labeled as spicy, peppery, and either warm or hot. I also find it a bit sweet. Young ginger is very juicy, and has a much mellower flavor. As it ages, it becomes more fibrous, less juicy, and much stronger/hotter.
