Fresh Cauliflower
The harvested head is known as a curd. A creamy white curd is the most common cauliflower but green, purple and yellow colours are available along with baby and romanesco cauliflowers, the latter having a distinct geometric pattern to the curd. Different types of cauliflower are grown for year round availability. Cauliflowers are annual plants that reach about 0.5 metre (1.5 feet) tall and bear large rounded leaves that resemble collards (Brassica oleracea, variety acephala). As desired for food, the terminal cluster forms a firm, succulent “curd,” or head, that is an immature inflorescence (cluster of flowers). Cauliflower (Brassica oleracea var. botrytis) belongs to the genus Brassica and family Brassicaceae, or the mustards. It is an annual plant that reproduces by seed. Cauliflower is a flowering plant with leaves wrapped around its stem forming a “head”.
