Carrot is a root vegetable usually orange in color though it may be red, white, yellow, and purple in appearance. Among common varieties root shapes range from globular to long, with lower ends blunt to pointed. Besides the orange-coloured roots, white-, yellow-, and purple-fleshed varieties are known.Carrots are eaten both fresh and cooked. They are used in many dishes, including salads, stews, soups, sauces, and cakes. The juice of the carrot can also be a sweet drink. Orange carrots are a good source of a substance called carotene.
