The ginger plant has a thick, branched rhizome (underground stem) with a brown outer layer and yellow centre that has a spicy, citrusy aroma. Every year, it grows pseudostems (false stems made of tightly wrapped leaf bases) from the rhizome which bear narrow leaves. Ginger is a knotted, thick, beige underground stem, called a rhizome. The stem sticks up about 12 inches above ground with long, narrow, ribbed, green leaves, and white or yellowish-green flowers. The spice has a slightly biting taste and is used, usually dried and ground, to flavour breads, sauces, curry dishes, confections, pickles, and ginger ale. The fresh rhizome, green ginger, is used in cooking. The peeled rhizomes may be preserved by boiling in syrup.
