Shall have the colour and shape characteristics of variety. Shall be smooth and shiny and shall be free from bruises, surface nodes, cuts, natural cracks and secondary roots. Shall not be matured, broken, and mis-shaped/deformed and shall be free from abnormal external moisture, foreign smell and/or taste. Common baby carrots have the same brilliant orange taproots as larger carrots, yet they are more tender and on average much sweeter than their mature counterparts. Baby carrots average 3 to 5 inches in length. Carrots are an excellent source of beta-carotene and a good source of fiber. Once full sized carrots are harvested from the fields, they are immediately put in trucks and taken to a facility where they are washed and sorted by size, cut, peeled and polished into 2-inch pieces.
