Rosemary extracts have been used as antioxidants by the food industry for more than 20 years. The first rosemary extracts used as antioxidants in foods were ingredients derived from oil-soluble, flavourful rosemary oleoresins produced by solvent extraction. Rosemary is a fragrant, evergreen shrub with needle-like leaves and two-lipped, purplish-blue and white flowers. New growth is soft and flexible but older stems become woody and form trunks with time. Rosemary extract is obtained from ground dried leaves of Rosmarinus officinalis L using food-grade solvents, namely, acetone or ethanol.
