It is susceptible to leaf rust. Similar to Scout 66 in winter hardiness. It is a strong gluten variety with excellent bread baking quality. Plump Hard Red Wheat Berries with 13% protein can be cooked as a whole grain cereal or pilaf, sprouted for salads or juiced, or milled into flour by the home miller. Wheat seed is an oblong shape with a blunt tip. The seed is gold to pale yellow in colour, with a papery texture. It is 6mm in length. The wheat seedling produces a slender coleoptile, followed by a true leaf. It has high protein of 12.0% to 15.0% (12% mb), hard endosperm, red bran, strong gluten and high water absorption. For the miller, the reward for incorporating HRS into the grist includes a higher-than-average flour yield from its harder, more compact endosperm.
