Parboiled rice, also called converted rice, easy-cook rice, sella rice, and miniket (as predominantly called in West Bengal and Odisha in India, and in Bangladesh) is rice that has been partially boiled in the husk. The three basic steps of parboiling are soaking, steaming and drying. Sella rice is a parboiled variety of rice that is partially precooked while the husk is still on. It is a cultivar of basmati rice we are all very well aware about. The parboiling technique helps retain some nutrients that otherwise get lost during refining process of the rice grain. It has a more fragrant aroma, a golden-yellow colour and a deeper taste. The grains are less brittle and have long individual grains.
