Green tea, also known as unoxidized tea, is made solely from the leaves of the camellia sinensis plant. The leaves are plucked, slightly withered, then immediately cooked to preserve the green quality and prevent oxidization. A brewed green tea is typically green, yellow or light brown in color, and its flavor profile can range from grass-like and toasted (pan fired) to vegetal, sweet and seaweed-like (steamed). If brewed correctly, most green tea should be quite light in color and only mildly astringent. By definition, tea blending is the simple process of putting teas of different characteristics together to form a final product.
