Brown sugar is a natural sweetener that comes from processing sugar beets or sugar cane plants. Most commercially produced brown sugar is made by mixing white sugar with molasses, giving it a distinct flavor. White and brown sugar come from the same source -- sugar beets or sugar cane. Brown sugar is granulated cane sugar with added molasses. It is coarser and more moist than white sugar and imparts a unique flavor and dark color to food systems. Two main forms of brown sugar are available: Unrefined. Soft brown light sugar is still largely used as a bakery ingredient to add depth to cakes, biscuits and pastries. As well as providing flavour, its high molasses content adds moisture to cakes which makes it ideal for baking, and partly explains why this sugar has such a long history in the baking industry.
